Rhubarb Rosemary Lemonade Spritzer

My friends warned me, “Avoid naming it anything with rhubarb, or it’ll deter people from trying it.”

After receiving some rhubarb rosemary jelly from Garrett a few weeks ago, I’ve been intrigued by the rhubarb-rosemary combo.

Although I can’t fully convey its deliciousness without you tasting it yourself, believe me, the mix is fantastic. If you’re open-minded and enjoy both rhubarb and rosemary, you must give this blend a go.

Garrett suggested the name “Rhuby Slipper,” which I like, or perhaps “Pink Princess” could suit it too.

The recipe below makes an excellent punch for a special gathering or even a magical unicorn-themed birthday party for 6-year-olds. It was a hit among the Sacramento food bloggers I served it to.


Cook Mode
(Keep screen awake)

  • 1 pound rhubarb, cleaned and sliced into 1/2-inch pieces

  • 2 cups water

  • 1 1/2 cups sugar

  • 3 tablespoons chopped fresh rosemary leaves

  • 1/2 cup lemon juice

  • Soda water or carbonated water

  1. Simmer rhubarb, water, sugar, rosemary:

    Combine rhubarb, water, sugar, and rosemary leaves in a medium saucepan. Bring to a boil, then reduce to a simmer for about 15 minutes until the rhubarb dissolves.

  2. Strain, add lemon juice, chill:

    Remove from heat. Strain out the solids using a fine mesh strainer, then add lemon juice. Adjust with more lemon juice if needed. Chill until serving.

  3. Add soda water to serve:

    To serve, fill a glass with a quarter to a half of the rhubarb-rosemary syrup, topping it with soda water.
