The ongoing debate about what makes a perfect bagel is unlikely to be resolved anytime soon. However, bagel enthusiasts everywhere can agree that there’s nothing worse than a stale bagel.
Fortunately, storing bagels properly is not a complicated task. According to the bakers at Zingerman’s Bakehouse in Ann Arbor, Michigan, the best way to store fresh bagels is in a paper bag at room temperature. “Paper maintains the crust and flavor, and while the bagels become chewier, they’re still fine the next day,” they advise. You can also place the paper bag inside a plastic bag. “This will keep the bagels fresh for four or five days, although toasting them before eating might be necessary.”
For Longer Storage, Freeze Bagels
If you plan to consume your bagels within 48 hours, keeping them in a paper bag is sufficient. However, for extended freshness, freezing bagels as soon as possible is the best option.
Dianna Daoheung, Executive Chef of Black Seed Bagels, suggests preparing bagels so they’re ready for the toaster. “Slice them before freezing and put them directly into the toaster after taking them out of the freezer,” she explains. She also notes that while refrigeration can keep them somewhat fresh, freezing is ideal for maintaining freshness. The fresher the bagel when it’s frozen, the better it will taste once thawed.
What To Do With Stale Bagels
If you find yourself with a stale bagel, there are ways to restore it. “It won’t be as good as new,” Daoheung says, “but by popping it in the oven and spritzing it with a little water, you can get it close.”
Zingerman’s Bakehouse suggests “reviving them in a 350ºF oven until the crust returns and they’re warm in the middle.”
