Barbecue gatherings are centered around meat dishes, whether burgers, ribs, steak or a combination. However, the side dishes shouldn’t be forgotten. One classic side dish is potato salad. Though, store-bought versions can sometimes disappoint with their odd sweetness. Homemade potato salads can offer an assortment of textures and flavors.
The sour cream and onion potato salad in particular enhances the creaminess of the dish with minimal effort. The combination of sour cream and onion chips were my childhood favorite and so, I decided to infuse these flavors into a potato salad. By using green onions and chives, the potato salad offers fresh yet balanced flavors. The potatoes are blanched, which softens their raw bite. Additionally, the use of granulated onion and garlic elevates the flavor profile of this dish.
Making this potato salad ahead of time will allow the flavors to truly integrate. If you do make it in advance, it will stay creamily delicious for about 4 hours. It can also last for a few days in the fridge. However, dividing the task of cooking the potatoes and assembling the salad can be done a day ahead of time. Simply store the drained, cooled potatoes and onions in a refrigerator.
This sour cream and onion potato salad offers a fun, tastier twist to the classic homemade version. Its explosion of flavors and creaminess will definitely elevate your barbecue gathering.
To make the salad, follow the steps below:
- Boil 2 pounds of Yukon gold potatoes in 1 tablespoon of kosher salt until tender. Drain potatoes over green onions. This lightly cooks the onions.
- For the dressing, combine 1 cup of sour cream, 3 tablespoons of mayonnaise, 1 tablespoon of fresh lemon juice, 1 teaspoon of Dijon mustard, 1 teaspoon of both dried minced garlic and onion, 1/2 teaspoon of kosher salt and freshly ground black pepper. Add chopped chives and whisk until all ingredients are combined.
- Once cooled, add potatoes and onions to the dressing and combine.
Then, let it chill for an hour before serving. Enjoy!
