When purchasing green onions, also known as scallions, they typically come in a bundle. Often, recipes require only a small amount, leaving you with leftover scallions. The question then arises: how do you keep them fresh for future use? No one wants limp, discolored green onions.

The Best Way to Store Green Onions
Through much experimentation, I’ve discovered the ideal storage solution. Begin by removing any packaging or rubber bands from the scallions and separating them. Discard any that are slimy by composting them.
Lay a dry paper towel flat, place the green onions on top with some space between each, cover with another dry paper towel, and carefully roll the whole thing up. Place it in a zip-top bag, press out most of the air, seal it, and store it in your crisper drawer.
Tip
Refrain from washing green onions before storing them, as this can decrease their shelf life. Wash them just prior to use.
Why This Method Works
The main cause of deteriorating green onions is excess moisture. It’s crucial to maintain a balance: enough moisture to prevent drying, yet not so much that it speeds up spoilage. The paper towels assist in moisture control, while the sealed bag keeps them from drying out.
With this method, green onions can stay fresh for two to three weeks, based on my experiments.

Green Onion Storage Hacks to Avoid
Like a dedicated scallion enthusiast, I’ve also tried various preservation techniques and popular hacks. Although enjoyable, these methods proved to be less effective and practical compared to mine.
I even attempted freezing them, which was a disastrous decision. The water content turned into ice, leaving the green onions soggy and lifeless.
Another method I tried was placing the roots in water to allow regrowth, trimming the tops as needed. Although romantic, growing scallions this way in an apartment isn’t practical. They can be kept at room temperature, freeing up refrigerator space, but require frequent water changes and the flavor fades over time.
